Would appreciate any help. I'm alone and need to cook for a sick family. I work ridiculously long hours so I'll have to wake up at 6 to cook. I'm hopeless in the kitchen. Can anyone point me to some quick recipes that don't take too much time? Is getting a crock pot worth it?
Thank you in advance.

Crock pots are the best with having a family IMO! Very easy to set it and go, best of luck to you :)

Get an instant pot. There are lots of great recipes for the instant pot on YouTube. It’s super quick and easy.

I second that. I have in my kitchen only an instant pot, a frying pan and an oven tray. With that I feed a family of 4 every night 7 days a week but spending no more than 1 hour cooking every day. From chili to spanish rice to beef stew to spaghetti, it does all with no time at all. Just set it and forget it. It is a miracle.

One of the SMs I worked with used to pay a teenager like $20 a week to do food prep (couple hours chopping and sorting veggies, etc).

Toss chicken breast, broth, frozen veg, rice, salt and pepper in a slow cooker. A few hours later, chicken soup, voila!

Use chicken with bones for soup - better flavor. You can buy a whole chicken cut into pieces.

Soups! So easy and make food for days. Add meat and carbs for easy, filling meals.

I second all the instapot recs

But some "no cook" recipes, that do in a pinch:
- Buy a rotisserie chicken and prewashed salad. Maaaybe cook a side of rice.
- All those frozen meals at Trader Joe's
- Bread and cheese and sliced meats for dinner (very European)

Crockpot (slow cooker) is like 30 bucks on Amazon. Totally worth it.

In addition to the above try to make any of the above in very large portions so leftovers from dinner can be used for lunch the next day.

1. How many ppl are u cooking for 2. Is this a few days or long term 3. Any allergies or anything? If none, see below:
1. Make a huge pot of meatballs at once, like several pounds. These freeze in sauce and defrost very well.
2. At beginning of week prep cut veggies, each in a separate container (lettuce, Cucumber, tomatoes) for easy daily salad
3. Get easy 1 pot or 1 pan meals, like a) soup with chicken and rice or b) chicken and potatoes with carrots.
4. Cook a large pot basmati rice Sunday and a large pot pasta or other carb like mashed potatoes Wednesday.
Then your week schedule can be based on above meals. Cook enough for at least 2 days at a time, always!

Soup, stew and chili are all great fall/winter dinners and can be made first thing in the morning OR over the weekend and heated up from the fridge or freezer. On super busy days when I was growing up my own mom used to make a whole meal for our family out of a bag of frozen onions and peppers sautéed in a little oil, a pound of ground beef browned in that with a small can of tomato sauce, then the whole thing served over egg noodles. 15 min dinner. Inelegant but quick, easy and hearty.

You gotta start cooking in large amounts and NOT make niche or cute one-two person recipes with all different kinds of ingredients. You can surely do it once it a while when you have time, but if you’re cooking for six regularly then you’ve gotta get in the mindset of things that can be done in large amounts - rice, pasta, sauces, lasagna you can make a big tray of, etc

I just want to say thank you to everyone. I've copied some of these recipes to try this weekend. Wish me luck!

I currently have an Instant Pot, but I found I don’t think the slow cooker function is that good, I preferred my crock pot. If you do use IP for slow cooking buy the optional glass lid, that improved our results for some mysterious reason. Instant Pot also is a pressure cooker, which I like but doesn’t save as much time as I’d hoped. I’ve heard a few people say a stove top pressure cooker is faster than IP, so I will probably buy a new crock pot and a separate pressure cooker at some point. If I had to pick one, I’d pick a crock pot. Getting a crock pot that has a timer feature to start on high, switch to low, and then switch to keep warm when done would be very useful.

Crock Pot. Put stuff in the morning and forget it until night.

When it gets busy and I absolutely cannot cook I do the following, which is MAYBE 5 minutes of prep time:

3 cans of whatever beans, rinsed, from the pantry. 1 can diced tomatoes. 1 package frozen corn (I like Trader Joe’s roasted). 1 package taco seasoning. Rotisserie chicken, shredded, optional. Stir.

Set it on low, and at night either serve with sour cream and shredded cheese for chili; in a tortilla as a burrito bar (make your own); or on baked potatoes (also make your own).

Budget bytes us a great website with simple meals. Agree with pasta, slow cooker. If there's a Trader Joe's near you, they have great heat-and-eat meals. And if you're a member at Costco, a $5 rotisserie chicken can be easily added to beans/rice with sauce or a few vegs for a variety of "bowl" meals. Think the equiv of Chipotle at home!

I can help
1. Go to Indian store and get some lentils ( toor dal)
Boil it with salt, water, turmeric and spinach and voila you have soup with may be some frozen nan bread
2. Buy canned chickpea. Cook some onion, tomatoes in olive oil put some curry powder and cook for a bit. Add chick peas and water, let it simmer, eat with nan or rice

I’m scratching my head knowing why I don’t drink more Gattinara. Frankly speaking I didn’t know what Gattinara was until I opened a bottle, read up on it, and found out it was Nebbiolo from Piedmont. For $30-40 you can get outstanding wines without the Barolo or Barbaresco price tag.
