Has she tried Trailhead?
Best place to start. Lots of material to use for learning.
+1 for Trailhead. It’s free, it’s self-paced and developed by Salesforce. Lots of functional roles, including BA (as mentioned above) and also QA is great as well.
Business analyst is a good place to start building those skills. In a lot of consultancies the BAs also do mock-ups etc because there aren’t designers on staff. Another thing to look at is a UI/UX boot camp. This one has a job guarantee so she can build the skills and then have some safety up ahead knowing the price of the boot camp will be refunded if she has trouble finding work.

Trailhead is way over hyped and overrated!
It’s a starting point, not the end all be all. For folks, who’ve never used Salesforce, it’s helpful and that’s what this post is about. Have a wonderful rest of your weekend :)
