I’d use it as an opportunity to shine! You’ll become a crucial part of their team if you’re able to support the manager in a tactful way.
If they are reasonably self-aware enough to know that this is causing problems, then maybe a catch-up where you address the concerns is a great place to start. Tell them where you see the cracks. You may go into that meeting with solutions in mind, but allow them to think about the problems, their implications and possible solutions. Otherwise, I'd stand my ground if they make unreasonable demands on me to compensate for their lack of organization. You can also try to negotiate project deadlines a bit if they hand something off to you last minute.
Effectively communicate their mishaps making certain you notate what’s causing the bad performance.

As a boss who’s totally disorganized, I was grateful to the people on my team who brought it to me - highlighted how it was affecting them and actually engaged to help the general running of the team. I’d actually avoided some of their suggestions because I thought it would come across as micromanaging - so to hear how they needed me to step up allowed me to make adjustments to how I led the team and helped them step up and appreciate the importance of knowing how to manage up.
Talk to them - let them know how it’s hurting your performance and how you feel it could be better.
