Same as for any other job. Start with a high level overview of what you actually do day in/day out, and then offer specifics as needed. I think we tend to explain jobs/professions as what the word itself means, which isn’t helpful as most people know teachers teach, marketers market, and consultants consult. What type of problems are you solving, whose agenda do you cover, and for what type of client?
Personally my answer varies from “finance” when I just want to end a conversation, to something like “I focus on x for x clients in x space, working across x agenda so I advise on x-z matters… for example…”

When the subject has come up at family functions I usually give some simple example, something like a company wants to buy a new computer system and we give them advice. Most of my relatives just hear it as I work with computers, and they think that's pretty nice.
