Immediately after any incident, send a detailed email to a close friend. Make sure this is exactly the story as it happened. If you have a diary or journal, write it down (though email is preferable because it’s to a third party and also has time stamp etc). Take and save any photo evidence, should you have any.
Try to be factual, don’t infuse with emotionally charged wording.
You can take photos of your computer screen so that you don’t leave a digital trail of what you are printing out and forwarding to your self via email.
Keep copies of your evidence at home, in case you are locked out of the office or computer system.
You’ll want to have copies of relevant HR polices (like on sexual harassment); all positive feedback you received; and anything else that could possibly be evidence.
Don’t email your lawyer on employer-owned devices because that diminishes your attorney-client privilege.

This is brilliant, thank you!
Associate 1 is right. Also:
If you ever make a complaint (or otherwise let your employer know what’s going on), put it in writing and bcc or forward it to your personal email. (Making a complaint or putting the employer on notice is sometimes important to prove).
For conversations you want to document if you’re okay to let your employer know you’re documenting them, email them to confirm what was said after the conversation and forward to your personal email.
