I think a lot of it has to do with the specific role. For something like SMM or UX/UI, it's probably important to have a robust portfolio. For more analytical/strategic roles, I think it's probably fine to just have a few basic case studies.
I think it's a process of winnowing broadly at first, and then focusing. In other words, portfolios do get a fast look and are sorted into likely candidates and noncontenders. So it's true that someone has to make a splash at the outset. Then come second or third looks that go into detail. A good strategy would be to think of what would pull someone in and keep you viable in that first winnowing, and also have material that would hold up well during the deeper dive.
