It’s ok to be selfish and put yourself first. Kindly explain to the meh role that something else came up and you’ll be going in a different direction. Be sure to thank them and offer to keep in touch. People understand. You might burn a tiny bridge but overall, it happens all the time. Take the job you actually want.
Brian Delap uses that "the team is going in a different direction," on me. I hate it so much. I would love to be able to say that to an agency. Omg. The power. I would be so drunk from it!

I am so worried about this very thing happening. All the jobs are being posted at once, and I am applying for them all. Usually I say, go for the fun one and the other one will hire someone else for your spot.

You do have to be careful if you’re working for a large agency where you may want to work in the future.
Take the better one! I have been in this exact situation before, after a company I was perma-lancing with for two years FINALLLLY made me a FT offer. A week later, a better offer came in, and I took it and stayed there for seven years. The one I bailed on revealed a lot about their true nature when they screamed and yelled and accused me of masterminding some devious plan to ruin them. We didn’t talk for seven years, and then when they found out I was looking again, we made up and they hired me again! Anything is possible in this industry. Choose the one you will be happier spending time with. We spend so much time working. Make sure it’s worth it. You are the one whose feelings matter! Don’t worry about theirs.
At the end of the day you have to do what is best for you. I say take the better offer and be selfish. You might burn a bridge with the company you already accepted a role from but at the end of the day it doesn't sound like it really matters much.
