If your approach is to finish a task first, I'd break your tasks down into smaller parts. This way you'll have more stopping/transition points if you need to move on. Or perhaps block time for certain tasks and even if it's not all the way finished, know you'll come back at your next scheduled block of time.
I am similar to you; I like to have everything tied up with a bow because it gives me immediate satisfaction. I am trying to follow the advice below and have learned that when transitioning to something else, to note where I have to pick up and a few details about what I was doing.
A fast-paced environment makes it difficult for me to remember where I was because I have so many other things on my plate that are also waiting to be completed.
(I have so many Post-its to make quick notes on as a reminder where to pick up from)
