I teach enrichment classes on summer vacation and a few nights a week. I have friends who work at our school’s before and after care program to make ends meet. We also have opportunities to make extra money by being bus monitors and teaching a specialty afterschool program like sewing club or lego club. Good luck!

That's a good idea! I have thought about childcare in general.
During the school year, our school offers after school tutoring.
It's probably too late for this now, but during the summers, they are always looking for aides to help with the special ed. students, who attend year-round.
You could also offer tutoring year-round.
I have a teacher-friend who does small stained glass and consigns them to local stores. I have another that has been selling small potted plants and doing terrarium classes from her house for years. I thought it couldn't make money, but she just opened a storefront in town and went part time last year!
If you have teaching materials that you've created, try selling them on Teachers Pay Teachers. It doesn't bring in much, but my same friend who does the stained glass has an account (she's had it for a few years), and she says that it brings her in about $350-$400 a month.
