Best place to start is speaking to someone at a specialty bike store. Tell them your goals (casual riding vs competitive etc) and they can get you “fitted” or provide brand recs. Got my bike that way (specialty brand) and turned out to be a great fit & great experience
Agree with this - i’m just wrapping up the month long great cycle challenge. If you have a Facebook account, join the Facebook group (gcc or great cycle challenge) - it’s a welcoming community where you can ask tons of questions.
I recommend going to your local bike shop and testing out bikes. Don’t just go to one - try several different shops as they all will have their set of brands they sell. As you talk to each shop - compare the bikes you rented and what you did or did not like about them. Tell them your price range - and see what they have. Right now, all the brands are delivering their 2021 bikes, so maybe you can get a great deal on a 2020 or even 2019 if they have them. Bikes don’t change a whole ton over time.
Mostly - buy the bike for you and your wife that you love. If you love it - you will ride it. Don’t get the off color because it saves you $50. You want the one that makes you feel fast, look fast, and makes you get out there and ride!

If you're looking for entry level mountain bikes, you won't find much on dedicated mtb sites. I'd recommend hitting up the local shops and stick to major brands like giant, cannondale, specialized, trek, etc. Components, weight, materials, etc will be similar assuming you stick to a similar price point. Find the bike that fits you the best and feels right.
As someone else said, fit is critical. Bikes will be similar, fit and bike geometry will determine whether you're happy with it assuming you like cycling.
