"Would you be able to offer one reason why I should maybe listen to my trainer?" No, this is terrible advice IMO. Some people love keto and successfully lose weight on it, but cutting carbs isn't the only way to get in shape, and for most people, I'd argue it has adverse effects. I do 40/40/20 carbs/protein/fat and have been able to lose weight just by keeping my calories in check. You can gradually pare down carbs if you're plateauing, but until that point, it seems really unnecessary to me.

I agree with MM1. If you're not in. a hurry to lose weight, which is what I'm assuming from your post, please do it the slow and steady way while you're getting to eat everything you want and need for your body.
From my personal experience with nutrition, here´s what I found to be super important:
doing intolerance & allegro tests. It provided me with insights into what type of food I should cut/reduce.
As for the rest, i believe that it is important to eat all different types of food.
I focus on eating high quality food and reading labels on the ingredients I want to buy.
Anything ultra processed is 99% of the time a "no" for me.
