This has been an issue for at any hybrid company I've worked for. It can really screw up communication if these policies aren't strictly enforced to avoid leaving remote employees out of the loop. Any time you catch it happening, enforce that they now have to summarize the conversation they just had on the correct platform. Eventually, they will learn to save the step and just do it all online.
Isn’t that what the team collaboration and culture is? I can understand if you are juggling hybrid/remote employees and keeping everyone in the loop. But if it is just a quick thing, then why not get up and stretch your legs?
It's funny, I come at this from the opposite perspective, I have to deal with people who really overuse the IMs. It's like the joke about how a meeting could be an email, and an email could be an IM. Well, in our organization most of the IMs could be nothing at all.

You’re not alone. I’ve tried explaining to coworkers about how IM helps me stay in focus mode, but some people still default to face-to-face because it feels quicker. Old habits die hard.
