Is it normal to our down a deposit for a Rolex? Or do you just tell them what you want, and when it comes in, it’s (potentially) yours?

It’s mainly a thing for (ladies) datejusts. These are specific orders, given the numerous configuration options. Dealers want to be certain you actually pick it up once they order it.
I don’t think that it hurts to try elsewhere to see if someone can get it to you quicker. There’s not much risk trying as you’re still pretty much guaranteed to get one since you placed your deposit but it’s just a matter of when you actually get it
I did the same thing for a DJ for me. November deposit and they were actually pricks last time I called (2 months after the last time).
Yikes sorry to hear but thanks makes me feel better. I guess I can keep the deposit unless I find another as we are traveling to a couple cities with multiple ADs. If I find one I’ll just ask for my deposit back.
