It's rare we get chances to work on multiple but if someone gets then it would be very good...

From my past experience, the more projects you work on (and the more they're different from each other), the better your learning will be.
Also, for a QA, they usually ask atleast two- three types of testing (functional, api, etl, automation, etc. Only performance and security testing are considered separately). I do understand that you need to build your expertise in one of these, but if you're dedicated enough, you can show that you have worked in different kinds of testing when you give interviews (you will also have multiple options, since you can interview for jobs of any kind of testing you want once you are well versed). Work for a project for around a year, learn well, move on to another.
