If you have young kids, give SO alone a weekend or a day stay at a luxury hotel nearby.
Is this for an anniversary or just “because"
And what do you want to spend
Just because. Up to $500. She doesn’t care about jewelry.
A personal massager
Is SO a M or F?
Do they have a craft or hobby they enjoy? Getting accessories for those kinds of things is always nice.
Word of caution: make sure you understand it well first. If you inadvertently get something they don’t need, or already have, or of an inferior quality, it can come across as you not caring enough about their interests and end up with a bad gift.
Of course it’s a nice gesture and in a good relationship would be appreciated for the thought, but practically it isn’t something they can use, and now they have to discreetly figure a way to return/exchange without making you feel bad. And some for some things that isn’t practical or even possible if it’s been customized.
I would go instead to the direction of something you know they already like or use, and get more or a better version than they would usually buy for themselves. Illustrative example: I love when people get me nice bottles of liquor or beer because they know I enjoy them but I don’t spend a lot on it for myself. That’s a great gift for me because it’s hard for it to be truly “bad” and even if it is, it’s not an obligation on me.
In contrast, if someone realized I like home theater equipment so just randomly bought me a sound bar, it would be a pain in my ass (gratitude for the gesture aside) because they have no idea that I have spent hours of research on my next upgrades and already picked out the exact items I want. So now I have a big box of something worse than I already have that I will never use, bought from somewhere that doesn’t sell the thing I actually want so I can’t really do anything with it at all.
Maybe an extreme example, but you get the point.
