Depends on how much time you have. I’ve only been to the North Island - enjoyed Auckland, and Meteora area, the glow worm caves and Wai-o-tapu.
Go to Mt Cook. Incredible. Also prioritize South Island!
Mt cook was insane! Echo this as well.
Te anau, wanaka, Milford sound, tekapo are all stunning and spread out enough that you will not see a lot of crowds (unless you go to the wanaka tree at sunset). There are enough camping spots (both paid with hookups as well as remote with no services) and diversity of activities to thin out the crowds. Personally I would not drive to Milford sound due to the crazy parking but I also went during a very popular time so maybe it’s not always bad. Roy’s peak is a steep incline but spectacular hike in wanaka.
