You’re planning to drop your career to take time off with family, have another baby, maybe study nutrition and the hope for the best?
I don’t know what you’re asking. Is this a good idea? It depends on how much money you have, how much your husband makes, where you’re living, and if he’s cool changing the situation so completely.
I think it’s kind of bonkers at this moment in time, but everyone’s risk profile is different.

I won't say like, I have more money,but I have a year's expenditure as backup.
My husband would be working. I would like to plan for another baby also, so, just thinking of spending quality time with family without the full time work stress and to do a course in nutrition and to explore the space. Is it a bad idea. If i clear nutrition, starting salary might be very low also. Still I would get flexibile timing and to take care of family. Kindly share ur opinion
This is a very, very tough job market with no sign of improvement. It could take you over a year just to find a new job. Many people are at 18 months unemployed or more at this point. Be careful, especially since you have a child and want another.
