How would you handle or what would you say to your Supervisor if she wants to meet between 11am & 3pm for a virtual meeting to work together once a week every week & when I ask her if we can meet after lunch at 1pm, she just IGNORES my messages & doesn't respond? I get headaches if I don't take a break or eat for multiple hours like that. Its insane to me how she can't even respect the fact that I should be able to get a lunch break especially if we're meeting for that long. Disgusting!!

Even at conferences where people are concentrating on presentations and speakers for several hours, they build in a morning coffee break and a lunch break (and them afternoon coffee break) to give people a chance to urinate, rehydrate, stretch their legs (to avoid blood clots if not for anything else) and to let their brain switch to something else for a few minutes to recharge and then be able to regain focus. There are physiological reasons for this because we are not machines. So you could try the health angle saying that your doctor has recommended you switch positions (meaning stand up to talk after a while of sitting) to address health concerns (you don't have to reveal any more details about that) every so often, including urination (say the word "urination" instead of "go to the bathroom" to highlight the medical necessity of it), and also eating to manage blood sugar levels, with a strong recommendation to not work while chewing in order to not have the stress lead to digestive issues. Personally, when I eat while doing something stressful at work, I get gassy and crampy, and that can lead to hours of discomfort. So these are real, reasonable, considerations which are health related. Taking that angle vs. the angle of "I have a legal right to / deserve my lunch break which you're trying to take away from me, even if it's just once a week" will probably get more traction, especially if you throw in the fact that it is a recommendation from your doctor. Your supervisor cannot ask you for a note from the doctor stating that you need to take a urination break or food break at lunch because those are such basic human needs that asking for a doctor's note to justify those would be entering lawsuit territory.
