DC, NYC, or Las Vegas. I’ve lived in all these cities. I don’t know if you want to cook Italian food but I’d definitely use that to get into a job.
You have to consider things like homesickness. Culture adaptation. Ease of transportation. If you’re from Sicily or the south you may want NYC. If you’re from Piedmont you find more of that in DC or Philadelphia.
DC has an embassy located here so you can maintain paperwork, handle visas with ease. Any sudden issues with your visa and you handle it at the embassy that day. Plus Fabio Trabocchi restaurant group loves his Italians from back home.
NYC has many places for different cultures to survive. BUT IT IS EXPENSIVE. Like you have places to visit when you’re homesick. Some people still speak the language and they have some spots that only speak Italian or serve Italian products. Bensonhurst, Arthur Ave, Howard Beach if you’re Sicilian or Napoletano. Just don’t be that guy who says “this is not REAL Italian”. Embrace the hospitality people there show you and they will love you. Also many great restaurants that would appreciate you for your knowledge of the culture. Rezdora, King, Al Coro, Babbo, Lodi, Estella, etc. And if you can’t get a visa, it’s easier to exist in NYC without documentation. I had many undocumented cooks from Mexico and Europe back in my time there. Great people.
Las Vegas restaurants inside casinos will pay well. They love to sell that they have “a real Italian chef” it validates them somehow. There are a lot of French people there cooking at French restaurants in management positions. The same for Italians at Italian Restaurants. There isn’t any water nearby, it’s hot as hell and if you don’t have a car it’s worse.
