My immediate thoughts are to reach out to people who know her. Her 3rd grade teacher, her parents, any occupational or physical therapists she's worked with, etc. I'd ask them what she likes to do in terms of physical movements, and what she can do. Can she catch throw a large, light ball? Does she like to move to music in her chair? I might even ask what skills they are working on and see if we could add them in. You could even let her be "in charge" of certain activities.
Assuming she can write or type, I might create a "getting to know you" survey for all the kids to take that includes some targeted questions. How do you like to take a break? Or something like that
I was going to say your schools OT/PT should have tons of ideas!
Check in with the child's OT and PT. You can also get help from your schools special education team.
