I have to help out from time to time. Theft isn't a big problem here from what I've seen. If I noticed it, I'd probably just alert my manager or security and leave it at that. Unless you're part of the security team, your company probably forbids you from engaging with these people for liability reasons.
It's our policy that we have to let security know. Even if it's just a little thing, if we see it, we have to report it. I never really know what happens once security gets involved but it's also above my pay grade.

I’ve never worked in a self checkout. If I did, I wouldn’t intervene when there’s theft. I would alert loss prevention and let them handle it

That’s a tough spot to be in. Your safety comes first, and most stores don’t expect front-line staff to confront theft—there are usually clear policies for a reason. Following procedure, reporting what you can, and letting management handle it isn’t cheating the store; it’s doing your job responsibly.
