I was helping a jobless new grad with job searching. I emailed and texted so many attorneys that I knew. When I found someone open to interviewing them, my mentee rejected the interview because they didn’t like the area of law.. even though they never practiced law anywhere before. I won’t be helping them with that anymore.
Safe to say your mentor is rolling their eyes at you big time.
Well you did waste your mentor’s time and energy so let’s start there. If they feel that way they’re valid.
Perhaps consider taking your mentor out for coffee as a thank you? I don’t think over explaining will help your cause if they feel negatively about what you said
If I were you, I’d buy them a gift basket and a professional apology note. Say you’re grateful and that you had Covid.
You were super interested but couldn’t bring yourself to answer the questions? Sounds like time for some self reflection. Amazes me sometimes how often it happens that people don’t think about the impact of their actions on the trust part of a relationship. Good luck, I wonder what your mentor will say to the HM now.
I think all you can do is apologize and acknowledge / own taking them for granted. You already know now you should have been communicative with them about this at the time. Use this as a learning opportunity on "managing up" so to speak. Your mentor sounds like someone super into mentoring you, so maybe they need some time to process before they respond.

I got invited for an interview! In the excitement I told my mentor I hadn’t initially applied for the job and realize I might have made a mistake by doing so.

I agree that self reflection is in order, but it sounds like you have done that. The next thing to do is fess up and own this with your mentor. We all make mistakes. The measure of a person is how you respond. You should be honest about your actions, and hopefully, your mentor will be gracious and understanding that you are deserving of another chance.
