Basic tones (grey, navy, black, etc) without crazy patterns, colors, or designer logos drawing attention.
No logos. Reduced color palette. Express yourself through texture and shape, not color. Look at Uniqlo and Muji for mass market inspiration, Comme Des Garçons and Yohji Yamamoto if you're feeling rich, Toogood and Margaret Howell if you're feeling European and artisanal. Look at how artists dress at gallery openings. Calvin Klein's original brand book describes the CK look as Sensual Minimalism, and adds: "it's not white, it's chalk." Minimalism doesn't have to be boring. I'm sorry that your date used it as a reason to lecture you.

I had a client that said he was minimalist. What that meant in practice is that he had one outfit for every day of the week. Did not buy anything more than that.
Usually it just means don't dress over the top/really flashy. Think: lady that wears a dress and a blazer and a bunch of bracelets and a huge chunky necklace and blingy earrings and a fancy watch. It's way too much going on. Tone it down.
That being said, maybe you wore a three piece suit on a first date and it felt like you were trying too hard? But really, you should wear what you feel comfortable and authentic in. Authentic will attract authentic and someone who is also "extra" will appreciate all the effort you put into yourself as well. So, don't change. It would be different if she said you were a slob or uncouth and needed better hygiene. But, that doesn't sound like the case.

It depends if see meant the same clothes over and over or an esthetic. The esthetic is simple clothes that complement your skin tone. Classic designs, no patterns, investment pieces
