You might start by offering to have a call or coffee or get lunch to catch up now that you're settled in so you can hear how she's been. If there's a bar association holiday event or something local you might ask if she's going.
The hardest part is keeping up contact when you no longer need each other, but merely because you genuinely want to stay in touch without being a burden. Ask questions when decisions come up and you could use advice. Give it time, and keep her in rotation with other friends and contacts like texting around holidays, reaching out when you happen to think about them to wish them well or send a news story. Hopefully she will reciprocate and you can continue to cultivate a good relationship.

Schedule a phone call to catch up or ask if she can spare an hour for coffee! Just be genuine and try to nurture the relationship as you would any other.
Reach out. Do what you need to keep the adult friendship alive, which normally is scheduling time to make it happen. If nothing else, think of this as business development work, which is worth scheduling.

Might be a dumb question but should this be an email text or call? I have her personal cell but we didn’t chat much on it.

I would call personally. Not sure how old your mentor is, but with the older generations, phone calls go a long way.
