I would do a functional resume format. I wouldn't typically recommend this if you're cold applying since I don't think a lot of people actually like this format, but given you're been encouraged to apply, it's probably a formality. The functional format (IMO) does a much better job at highlighting skils and experience over job titles (vs a traditional resume). Also, since you don't have bullets underneath each title on your job history, it can highlight career progression and increased responsibilities at individual organizations better as well.
