Define “restore”. What is it you’re looking to learn exactly? Movement service? If you’re looking to learn movement tear down buy anything with an ETA 28xx in it (non-running, off ebay, for $25) and tear it down to see how it works. Most of those movements can be made to run again with a cleaning and oiling.
I would suggest looking at old Soviet watches (check names like Pobeda, Raketa, Slava). The watches in the 50s and 60s were based on French movements and were actually close in quality compared to the top watches of the day. Most can be had under $100 and if you service them properly can be within +/- 7 seconds a day. Here's my Kama from the 1950s:

Lots of vintage pieces on eBay and watchuseek. Pretty much every vintage piece needs something if it has not been recently serviced and repaired.

I haven’t bought this myself but I’m looking into it https://diywatch.club it’s a kit to build your own watch. Not a service like you’re asking for, but a similar idea of taking all the little parts and assembling them.
