Have an offer from a dream company but I'll need to go in at a lower level. Knowing that I can bring a lot of value to the company (read- I know my worth), I negotiated with the hiring manager to have a level/comp review 6 months after employment. If I hit all my goals (ie, prove myself) within that time frame, I'll get a promotion and salary adjustment.
QUESTIONS:
Should this be in writing in the offer letter?
How detailed should it be? I assume I won't know what goals to set till I start...

Switching team internally competing with external candidates. was asking a promotion for next grade midpoint but was ok to accept >=50% hike which i told hiring manager before the process start itself which he said will consider if I'm the one selected.

Attended 5 rounds-- 1 coding, 2 technical, 1 managerial, 1 hr. Now after 2 months telling me I'm the selected one, but offering me just 20% hike and same grade

Deloitte USI is offering me 15LPA fixed and 1lack joining bonus and HCL offering me 23LPA fixed. I've tried to negotiate with deloitte but they are not ready to negotiate and asking me to join on the same CTC which was initially provided. I'm confused to select the company. My title is technically Marketing Lead but I want to put Head of Marketing on my LinkedIn etc. I think of these titles as totally interchangeable—I just like the way the second one reads better.
