Personally, Angel/Islington. I used to live there and loved it! It has a nice village vibe, lots of restaurants and young professionals and you can walk places including into the centre of London depending on your walking appetite. Budget sounds plenty for living on your own although single people do share into their 30s because of the cost.
Covent Garden/Holborn are city areas not designed for day to day living - no big grocery stores/same amenities.
London Bridge would be second choice. E&C is up and coming but depending on what you're used to, you may find parts of it sketchy.
With that budget you’re looking more at Shoreditch if you want something nice and modern. Angel/Islington is more residential and quieter neighborhood but prices are pretty high atm, the flats in that price point will likely be smaller and older with poorer energy efficiency (= higher heating bills). Somewhere between Shoreditch and Angel proper might work but niceness and safety varies block by block so take a look at Crystalroof to get a sense. Just south of Old Street Station / west of Pitfield street is more quiet and modern. Further east will be much rowdier.
Stay away from Elephant and Castle generally, although it is much cheaper. Again, look at Crystalroof. If you want central and cheap, some of my colleagues live right by Lambeth North (lower marsh is a nice little street) but agree that Angel is a nicer neighborhood.

In London flatshare is very common as the average salary is a lot lower and rent is going up everywhere. On the 3 areas I definitely recommend Angel/Islington and living alone if you can unless you have a friend to flat share with…that’s because you’d never know who you’ll end up living with
