I cook a huge Sunday dinner, that can go until Tuesday. Then Wednesday could be spaghetti 🍝 and meat balls night. Thursdays can be any left overs, or breakfast for dinner night. Fridays, we pick up dinner from a favorite pizza 🍕 store.

I love leftovers because they work so well for my lunches. Sadly, my family waste leftovers.
Crock pot! Dump some stuff in, turn it on and come home to dinner. I also use crock pot liners for really messy stuff. Makes my life much easier.

I’m purchasing Factor Meals via a membership. I don’t have any other people living with me so I don’t have to feed anyone but me.
I make a menu for the week with my family’s
input. I meal prep as much as I can on Sundays to make things go smoothly. My kids are teens. Sometimes, they cook dinner, which is great.
I wash, peel, and cut my fruit and vegetables all at once and pack them in containers or Ziploc bags then it makes it quick to grab some or add them to salads, pasta, yogurt, etc. Also I found out that you can throw a big bunch of veggies into the air fryer to roast them and then they are amazing with fish, chicken, scrambled eggs, or pasta.
I buy prepared bags of salads, open them down the side, along with the packs of goodies inside, then use the bag as a plate. Once I'm done, I wrap it up inside itself and toss it. I HATE making lunch so much, my kids made their own pbjs for lunch starting in first grade.

I have been trying to figure this out too! We tried meal prepping and we lost so much of our weekend. Now we have just been making a grocery pickup once a week and trying to plan meals.
I try to cook one or two “big meals” like roast chicken and potatoes or meatloaf on a weekend so leftovers are available later in the week. Otherwise I cook quick meals (like 20/30 mins no prep) like hummus pasta, flatbread pizza, homemade Mac n cheese, or diner dinner (breakfast for dinner)
