Go see the flamenco dance. Dont go to a place with a large crowd. Its much better when its less crowd and you can be close to the dancer.
Watch a soccer game there, the atmosphere is amazing (There are 2 local team, Sevilla FC and Real Betis, both teams loved by their local fans)
Explore the region. Cadiz is charming AF. Sanlucar is the Hamptons for Sevillanos. Granada is not that far by train. Not sure how they are in January though.
Great bike riding city — rent a bike and explore up and down the canal! Ride to the Alcazar Palace, then Plaza de Espana/Maria Luisa Park - lots to see within the park. Check out the abandoned Expo ‘92.
You can catch a flamenco show at Museo del Baile Flamenco.
how many days needed?
You could go to one of the Arab baths. I did that a few years ago and enjoyed it. And eat lots of tapas!
Real Alcazar, Seville Cathedral and Geralda Tower, Metropol Parasol, Alameda de Hercules (great spot for people watching, tapas spots- Casa Paco is a good one). Relax and take your time. Siestas are a real thing in Sevilla, lunch is 3 pm or so, dinner 9/10pm. Have a wonderful time!!
