This is oversimplifying. Some uses of AI (particularly chatbots and image generators for general consumer use) absolutely fall into your critique and we need to be more critical about the real costs (financial and environmental) and value we’re getting.
However, other uses of AI that are more around deeper insights using large amounts of data can be far more valuable and potentially worth the cost. I wouldn’t write off all AI in a blanket fashion.
AI is technology just like the internet. How we use it is what decides how evil it is.
Can we use it to speed up research, cure cancer, grow better crops, increase quality of living? Yes.
But will we? Hell no. We will let corporates and governments use it for profit at the cost of humanity. At some point we have to agree we let them do this to us.

The ROI is as strong as the crypto case right now. The level of continued capital where chips and data centres need a refresh every 3 years, along with the exorbitant energy and water consumed isn't being scrutinised. They're all chasing a "solid maybe" and it makes no business sense. This is what happens when there is too much money flowing in the markets. Irrational behaviour wins.
It's not obvious where the check and balance comes from. I'm not sure what the trigger is or if we'll see a crash at all, or a slow deflation, but the sheer amount invested indicates there will be many many more losers than winners. One thing is for sure: the public will pay the price like they always do. Private financial markets will collapse, energy prices go up, inflation and recession. Governments won't be able to do bail outs for the sums we're talking about, but we're all connected to the markets and we all go down.

It depends on your definition of demonic. Even outside of religion most people would agree that the supernatural is a thing and can have an effect on the world. To that end, having LLMs and other AI tools that are effectively black boxes in terms of reading feels like a very straightforward place for the demonic or supernatural to do some sus shit.
