If the salary is good and she’ll support and help guide you in your new role than you’d be crazy not to grab it. Congratulations.
I have learned that you work for people, not companies and not in roles. She knows who you are and clearly thinks you can do it. Also, it’s on her if she starts a new role and immediately hires someone who can’t do the job. So she thinks you can do it and has an incentive to set you up to succeed.
The worst thing is that you have a big learning curve ahead of you. Sometimes the best things come out of being uncomfortable. Unless you feel that it’ll be too far out of your depth and your boss will have their hands too full with their new title, I’d probably go for it.
Do you like/trust her??
