Is it uncommon for an employer to make an employee sign a contract guaranteeing commitment?

I understand that its sometimes hard for them to find someone stable to work for them. I am unsure if this practice is acceptable though. It may not be a good fit and they could just force you to stay and they can exploit you by making you work extra hard. I think at will employee is more appropriate.
