For that money and style, check out the Longines Master Collection and some of their Heritage watches. Great build and movements.
If I were you I’d keep the Seiko until I can get an omega honestly. Buy pre owned
Came to say this. Save a little longer and up the budget a little - $5k goes a long way in the second hand omega market
Get a Seiko Alpinist, original if you can find it. I’ve had people take off their Rolex to try on my Alpinist, it’s a stunner.
Next level up, go for a Grand Seiko or an Omega - Aqua Terra is beautiful, classic, and understated. I also like the simplicity of a Rolex Explorer, but that’s getting into expensive territory.
SPB143 or variant.
Tissot PRX is a modern classic
Nomos club campus
Used Seamaster Aqua Terra
In no order, some watches I like in that price range:
Nomos Club Campus
Oris Divers 65 and Big Crown (check out the new Bullseye)
Christopher Ward C1 Moonphase
Farer Roche II
Used Tudor BB 58
Used Grand Seiko SBGM221
Oris Aquis. Love mine, more than my Rolex.

I would wait until you can just buy the watch you want (the omega or Rolex you mentioned).
But I like Longines in that price point if you insist on buying something
Longines Hydro conquest
Longines Spirit Zulu time
Slightly lower
Hamilton Khaki
Hamilton Jazzmaster
You might be able to get a used Tudor Black Bay for that range
Not necessarily within this budget but look into Grand Seiko.
Go Tudor.
