I was just offered a CUNY role. The title is Higher Education Assistant. According to Glassdoor, the average annual pay for that role is $83,418. However, I was offered $62,500. I requested for the minimum annual salary to be 75k. Does anyone have experience navigating the CUNY system and their pay?

On the surface...8% increase is not terrible, but really it depends on the job, cost of living for the area, and industry. Let alone the sheer competition for jobs right now is heavily in the favor of employers. They don't need to pay top dollar for talent when so many people are looking for work.
That amount is good, IMO. It is common to ask for more since you have more experience now as compared to what you are making. Give a range though. Don't sell yourself short. Ask for that amount and if they say the range is lower tell them that the amount they are hiring at is OK (during the interview) but it will depend on the total benefit package (base, bonus, PTO time, benefits, etc). However, if the company is somewhere you want to be, then sometimes you have to do a lateral just to get your foot in the door. So, my comment is a long response and might expand beyond you question, but that salary ask is not crazy. Go for it! Good luck.
I don't know your job title; so, I can't say for sure if your numbers are reasonable, but I'd recommend checking Glassdoor's Company Salaries page: https://www.glassdoor.com/Salaries/index.htm Hopefully, that will help you come up with your walkaway rate (the minimum amount you need to avoid having to look for a new job) and your ideal pay rate.
