Practice
This happens all the time no matter how much one is prepared for interview. Tips I follow :
1) 2 mins breathing exercise to calm my nerves before the interview .
2) I always try to strike a chord with the panel in first few minutes helps me to relax and perform better.
3) when ever I encounter an brain fade movement . I would always try to explain an event / problem statement whilst I am organizing my logical thinking again
4) Please do not overthink your interview process once done. The hardest part is waiting to hear back again from recruiters, I try to practice to not have any expectations this way I have my anxiety in check.

Keep interviewing then you'll get desensitized by interviews
Do a practice exercise. Come up with some questions you assume you'll be asked, and speak out the answers. Run a stop watch on your phone as you're talking, and get used to how much time you're using up. Really think about keeping things concise. And learn to wrap up an answer. Disengaging before you go into a tangent is a key skill, it's useful in everyday interactions, but especially in interviews.
1) practice every possible answer and steer the conversation to what you know.
2) Start asking questions yourself. come in with 10 questions prepared.
