I think a simple, non curricular activity and a little intorduction note is probably the best way to go! Something simple that your students might have fun with, that doesn't really have anything to do with the class and more to do with getting to know the students. Share their favorite meme and provide insight into why they enjoy it, or maybe share some music or something for the class to see. Really it depends. It's also a great way to gague who may or may not participate during class on eLeearning days. Good luck!

All About me assignment is great. You could use Padlet. Also I would call the parents/caregivers of the new students (using Google Voice) and briefly introduce yourself and the goals/expectations of the class. Remind them of eLearning day. Find out if they need to pick up a Chromebook from school and if they need a hotspot. Share how they can access your Canvas page. Ask how their children are enjoying school so far, what helps them to learn in class ect, . If the parent doesn't know then ask what the child's interests/hobbies are. If the parents speak another language then arrange for a district interpreter to be on the phone call with you. The child might even be able to translate for you if a district interpreter isn't available. Say you are looking forward to having their children in your class. Send a mass email to your parents about eLearning Day, tools needed for eLearning and a reminder to check (or join if new) Canvas for assignments. You have an All About Me assignment due[date/time] I hope this helps.
