Always keep interviewing! You never know, you might wind up with a better offer. And if something were to fall through, you don't want to have to start the job hunt over from scratch.

I agree with everyone else, keep interviewing. I have seen offers get pulled the day before someone is set to start. In this job market, you can't be too careful.

Keep interviewing until you have a position secured that you are for sure about. Even then, if you have interviews scheduled that don’t interfere with your new work, go to them!
