Agree with StreetEasy, but I honestly have the best luck just walking around and getting the names of rental buildings. You can see the outside area and get a sense of the building by peaking in. Also, if you are looking in west Chelsea my building has availability!
Which building
Zillow, asking friends for referrals, asking brokers about off market listings
Roomi is a decent source— can find a room or a whole place on a month to month / yearly basis.
Get a realtor and save yourself some stress. Ask friends who are realtors or can refer you to a good one
Streeteasy is the best you can find in NYC
If interested in Hudson yards, I can refer you to my building

Look up property management reviews and start hitting their sites one by one. They handle a lot of condo/co-op rentals, some of which may not be on the MLS or CL. Sign up for the weekly The Listings Project email, too.
Also, talk to your current super/maintenance person to see if they could keep an ear to the ground since surprisingly, a lot of them know others in the industry.
Lastly, walk the neighborhood you’re looking to be in to look for signs or do a pop-in and ask. Or even jump on NextDoor and post what you’re looking for. Good luck!

Found my place by using google maps and zooming in to specific areas. Ended up choosing a place not listed on Street easy
