If your primary use case is for Instagram I’d actually encourage you to use your phone, maybe buy a a gimbal, but focus on the camera settings (enhanced stability, 4k resolution, grid lines, turning off HDR, etc). A DSLR or mirrorless might be overkill if you’re planning on IG posts, stories, or reels. Granted, some reels have high production quality so a lensed camera could make sense if you’re looking for low f-stop levels for shallow depth of focus…
Not sure what kind of videos you plan on shooting, but generally when it comes to "high quality" the two biggest factors are lighting and sound. If you're doing talking head videos, invest in a solid key light setup and a lav mic. With those two things, you can shoot high quality videos with your phone.
If there’s a camera store near you, best advice is to go and test a few out to get a sense of how they work and if you find something you can realistically imagine carrying around all the time. If you get something gigantic that you won’t want to lug around, it’s pointless.
Since you say you’re a noob, might make more sense to get a point and shoot instead of a DSLR or mirrorless. I like the Sony Rx100 series, but they’re pricey. The Panasonic Lumix ZS100 is good too.
