I use this website called airwander to find cities I can use as layover and spend couple of days there. Last time I booked a flight from US to India with a layover in Bali for 4 days and I even got the ticket for $300 cheaper than the standard ticket!
I think if you call the airline and provide specific flight numbers, they can do this for you. Try using the Ita matrix to find your preferred flights.

Also check visa requirements - many countries with a 30 day tourist visa cap won’t allow you in without a return ticket

Should be able to. I had a 46 hour layover in Dubai once. Emirates markets that option...or at least they did.
Dubai has a specific visa for this and I think it’s a visa on arrival. Emirates website has a lot of information on this and have found customer service chat to be helpful when in doubt.
You’d need to enter it as a multi city booking on their website, though it may end up breaking the fare rather than pricing it as a stopover. If the fare jumps by more than $100-200 when you do that, I’d call a travel agent (AMEX Travel works) or Emirates directly.
