'Volunteering' isn't really a thing for business school. Often engagement as a volunteer is a way for an applicant to demonstrate leadership which is what admissions committees are looking for.

I would worry less about what you are NOT doing or haven't done and more about the contribution and impact you have had in your role.
What challenges did you face? What was it like to step into a family business and establish new processes and procedures? What challenges did you face internally and externally? What was it like to need to deliver quarterly results to the PE firm? Did you ever miss a quarter? How did you and the team deal with that?
Take some time NOW to reflect on what you have observed, done and learned and how you intend to build on lessons learned during an MBA program.
You have a perspective that few have and that will be valued.
And I suspect that there are some leadership examples you might share. Perhaps you were a subject matter expert? Perhaps you led by example? Perhaps you are an empathetic leader who took time to understand the perspectives of a variety of stakeholders before pushing an agenda?
You have a good shot at M7 if you frame everything convincingly, maybe get a good consultant (if ur not the best at story telling) and you’re set after you get an above class profile average GRE/GMAT
