Anybody have insight into ballpark salary range for Director level pay at Microsoft in a non-engineering role? I understand there’s probably varying degrees based upon org/function, as well as location. Just assuming Remote work, what would salary/bonus/stocks look like? Or just TC in general?

Micromanagement is usually an emotional issue, the person feels anxiety and a fear that they'll miss something important which may jeopardize their position. The only way to deal with it is to assuage their concerns in some way, which is easier said than done. In your example it seems like the person has a real problem if they're wasting work time on ordinary emails that shouldn't concern them anyway. It's probably best to just get away from them, transfer internally or just find a better job.
At first, I was going to say, whatever, they want to be on every email thread, fine. But the critiquing afterwards is a lot. I’d make some templates and have them approved or some kind of style guide, because no way we’re going to have the same problem. Really, the manager should be the one doing it, but they probably like doing it, so I’d watch out for that.
Did this come out of nowhere or has she always been this way?

I feel for you. This person's issue is not likely to change. I'm with Associate 1 and perhaps create a template or suggest that you can use approved language if that is what is preferred. Start looking for another employer. You already know you don't have the autonomy to think on your own under her direction. Sending good thoughts out your way.

Most likely there is the chain of micromanagement
Take the person off off BCC and put on the CC line so everyone knows they are to cc you and then they can have more replies and double or tripple the email. Worked for me in the past
