How do you explain leaving a toxic work environment when interviewing for a new job? Is it good to be honest or is the rule of thumb to not say anything remotely negative?

I wouldn't give an explanation. It's not wise to talk anything negative about your job. Employers don't like this nor do they really care. Just say you're looking for a new opportunity to grow or something.

What kind of work do you do / population do you serve if you don't mind my asking

Yeah, I never say anything negative about previous employers. The closest I come is "It wasn't a good fit". Otherwise I go work generic "looking for opportunities for growth" or something that really aligns with the organization I'm interviewing work. Like, "I've really wanted to support this type of work and I saw your ad and it seemed like such a great opportunity to work in this field".
