I've gotten a lot better at saying no when it would be physically impossible for me to add one more thing to my plate. I think my manager has come to respect that I will say yes when i can and no when I can't, and we've built trust that way. But I understand that's easier said than done. Do you try time blocking and giving yourself dedicated focus time where you won't get interrupted by meetings and/or other office distractions?

Yes that’s defiantly easier said than done, as I don’t want to say no I can’t do it but sometimes you just have to bite the bullet and say it’s too much! Yes I work at home around 2 days a week which I find easier as there’s no distractions and I’m on my own so I have no one to talk to.
It sounds like you've got the right approach by taking on the most urgent tasks first. A lot of it does come down to prioritizing. But, at some point you need to admit there are only so many hours in the day, and you may need to communicate that. If work is being added to your normal workload that can become a problem. We all like to be a team player, but there needs to be some limits and boundaries.

Yeah definitely, I just feel a bit guilty saying no to taking on any tasks but sometimes you just have to say no to get other things done first, but trying to prioritise some tasks when you have a list as long as your arm can be tricky at times!
That sounds intense ... I have definitely been there. When it all comes at once, I pause for 10 minutes, write everything down, then sort by urgency and impact. I also send a quick priorities check-in to my manager if it gets messy.
