I make lists. I can't handle everything at once, but I can handle a list like a champion. I do what I can to accomplish as many things as possible from the list during my eight hours, and then I log out. If I don't make myself log out, I will work until evening every single day, so the list method helps.

Check in frequently on priorities with your boss and their boss. If there is alignment 2 tiers above you, you’re covered. If anything outside of that comes to your desk, flag it to them and ask if it’s something that should be prioritized or not. Unless you’re a surgeon, most things can wait.
I'm convinced that so much of work is just learning how to prioritize. Sometimes you have to be ruthless and just put some things farther back in the queue. I just try to take care of what absolutely needs to get done first, and then work my way through.
I do not have to worry about that task that’s due next week, focus on this week, or day, and it’s a lot easier for me. Have a few longer-term projects, so my to-do list is giant, but it’s all very reasonable in terms of due dates. Just had to get myself out of it all, needs to be done asap mindset.
Do you not use Agile methodologies?
Create a priority, then break each item into individual, actionable steps. It's the easiest way for me to combat the feeling of being overwhelmed by my workload. Once you have that roadmap in front of you, it's easy to start chipping away.
