See if you can hire a driver while you're there - I was able to and expense for a work trip in Chennai and really appreciated the safety and consistency

Agree salads will be dangerous because of the water quality.
Most Indian recipes don't have wheat flour in them (except for the breads), they tend to use chickpea flour, so you should be OK. Do you use the FIG app or anything like that to check on foods? You could also search Indian recipes and see what's in them before you go, to identify a few widely available things you know you can eat, like chicken Tikka masala.
The Bangalore region is quite used to Western visitors, so you can probably get food with reduced spices. They should also understand celiac disease/ gluten free, though cross-contamination might be a concern. Someone at your hotel can probably help guide you to foods or places that will be safe.

Hey I just got back. Do not rent a car - have your company hire you a car with driver. You cannot (and I stress this as someone who has travelled all over the world) cannot drive yourself. Uber does work. The airport is about an hour from the city and I’d recommend having a car pick you up (especially if you land late at night). I felt generally safe and used the regular level Uber. I don’t think there was an Uber black. If I can remember the name of the salon chain I liked I’ll add it here but I would just go to a fancier salon in Indiranagar.
Adding on — Bodycraft was the name of the small salon chain I used to get a blowout, mani pedi, Swedish massage and hair spa treatment for like under $80-100 USD.
