Time away from the children at the spa
Looking for help as well since I’m in a similar boat. I took a glance at a couple gift guides and felt very uninspired
I think there is a consensus on previous posts like this that time to herself and being pampered is the best thing. I’m sure you already pull your weight with doing all the housework and cooking etc but maybe a spa day and time to relax for her so she can unwind.
My wife also very much prefers experiences to things for gifts though I got her a nice pair of earrings in our daughters birth stone for her first Mother’s Day. She loved them as she’ll give them to my daughter when she gets older. I will caveat that our daughter was born a week before Mother’s Day so time to herself and pampering wasn’t really an option at that point.

Another vote for time to herself.
I will say I got my wife an ugg bathrobe for her first mother’s day (and some really soft PJs) and it’s one of the few things she hasn’t returned or exchanged.

I bought her 12 massages at her favorite place and worked with her to make time each month for her to step away and get those. She loves the forcing function and the time to step away. Normally those turn into like 3-4hrs away because shopping or friends are nearby. It’s been great for all of us cuz it gets me dedicated kiddo time.
