Although I would keep my expectations as a junior minimum. But, I think from manager view point your thinking is on right track. Your junior is quite fortunate.

Instead of teaching her design . Teach her how to figure stuff and learn on her own. That way she will keep growing continuously:)

Can you provide some tips to start with?
Instead of Teaching, Allow them to come up with a soln to th tasks and review internally and have a review session weekly once with design team under you and all of you share your critics or thoughts on each other design
This way even the junior can suggest new patterns/ideations/ideas for another designer
Also she can learn from those review sessions
Tell them to come up with reference design (as she's in junior level)
That'll help them to maintain standard and recreate what's available to match your design system/task.
