I prefer not to drink during the day, and if the situation were to come up I'd just say that. I suppose in an earlier era it was considered odd not to be drinking at lunch, but we're living in healthier times now. I've never had anyone question or challenge me for not drinking at lunch, and I haven't sensed that anyone was offended.
I wouldn't expect a client to find it rude. Some people can't or simply don't want to drink during the day, and there's nothing wrong with that. That said, if they ordered one and I had a light workload after lunch, I'd probably join in.
When I take the client out for dinner, I feel like it is ok, have done it for 30 years, No one seems upset about it, as long as your are responsible for yourself. 1 is good, 3 is too much! Don't do it during day hours, not professional.
